Io Ci Credo Innovation Award
Master Biga, the first app for preparation of doughs with biga, is the winner of the “Io Ci Credo” Electrolux Professional Innovation Award 2021.
In Cibum is the Higher Gastronomic Training School of Southern Italy. Located in the province of Salerno in the Campania Region, the school is dedicated to professional training in the food and wine sector and one of its partners in this dissemination of Italian excellence is Electrolux Professional.
In Cibum Lab is the innovation laboratory of the school and in order to support and develop ideas and startups in the food sector, the lab has initiated the exclusive acceleration and training program Io Ci Credo. And one of the entrepreneurial projects is selected for the Electrolux Professional special Innovation Award.
This year the award was rewarded to Master Biga, the first app for preparation of doughs with biga, a type of pre-fermentation used in Italian baking. The app uses an algorithm to let you know the time and methods for the preparation of a perfect biga dough to be used for pizza, bread or any leavened, with the aim of making the baking world smarter by providing a simple tool to help professionals during the preparation of dough.
“We found Master Biga very interesting, both from the point of view of the algorithm behind it, and from the community that has been created around it. It’s a great way to create engagement and awareness as well as avoiding food waste and increase proper nutrition.” says Viktoria Roos, Open Innovation Leader.
